Whether it’s a solo Sunday brunch or you're having company over, waffles generally elicit smiles all around.
These waffles are no exception plus they are no muss, no fuss. You can mix them up right in your blender and pour directly from your blender container if you’d like to.
The best part? These waffles pack a good amount of protein when you have them with my strawberry collagen topping… One waffle + 1/4 c of delicious strawberry topping = 13g of protein!
A standard round waffle iron works well for this recipe. This my favorite basic waffle iron as well as a clean cooking sprays that will make this task a lot easier.
Yield: 4 standard waffles
Ingredients:
3 eggs
1 c full fat coconut milk
¼ c club soda or water
1 T agave nectar
1/2 t vanilla
2 1/2 t baking powder (1 ¾ t cream of tarter + ¾ t baking soda)
Pinch salt
1 c cassava flour
Process:
Dump all ingredients into your blender in the order listed
Blend until smooth
Use standard size waffle iron per manufacturer’s instructions
Notes: Coconut allergy? Sub ⅔ c nut milk like cashew or almond + ¼ c avocado oil in place of the coconut milk.
