My sisters and I grew up with our Mom reading The Tale of Peter Rabbit to us quite frequently. It has always been a family favorite book and my darling nephew, Henry Charles, has recently taken to it as well.
He loves to reenact and recount the adventures of Peter Rabbit and knows all about how Peter ate far too much in Mr. McGregor’s garden. When Peter became ill from overeating he went in search of parsley to soothe himself. While I’ve never tried parsley for such ailments, I do really love the brightness of it in a salad dressing.
This simple salad dressing whips up in no time and goes well with almost any salad. If you love garlic, try adding some extra.
This recipe goes out to you, Henry. Auntie loves you very much and hopes you will never be too grown up to enjoy Peter Rabbit.
Yield: Just over ½ cup
Ingredients:
½ c extra virgin olive oil
5 T fresh parsley, leaves only
1 clove garlic
¼ - ½ t salt
⅛ t black pepper
1 ½ T fresh lemon juice
Process:
Toss all ingredients into a blender and blend until thoroughly combined (dressing will become green with small bits of parsley visible).
Store in the refrigerator for up to a week.
